Storage instructions: This wine can be drunk now but will further improve if carefully stored for up to 2 years

Winemaking details: The grapes are manually harvested in September, separated from their stalks and then gently crushed. The resulting 'must' is transferred into stainless steel tanks for 6–8 days for a controlled fermentation of between 24-28°C using specifically selected yeast strains. Following the fermentation the wine is gently and expertly pressed before being aged in traditional large oak casks to allow further integration and balance. The wine is then decanted and filtered to ensure it is bottled in its optimum momen
